What is up with these antiquated job applications?

I'm Arab and I've come across multiple job applications that ask me to define my race. They have everything from African American to Asian to Hispanic to white, except Arab. They don't even have an "other." One of the applications I filled out was for a large company that deals with videogames (not going to mention who they are unless they give me the job) and it too had the same thing. No Arab, just African American, Hispanic, Asian, and white, no "other." It's 2011, get with it. My question is, consider your race (not mine), what would you put down if your race wasn't there?
